One of the last chapters of Alice: Madness Returns is a "meat" level. The video attached to this post displays gameplay of that last level. I would recommend watching the video over playing the game though because it takes a while to reach this point in the game. To get to this point means not only going through the underwater level but it would also mean going through the Asian level and that one in particular is long and boring. I myself tried to play through A: MR just because I wanted to get to the meat level again but in the end, I don't think I got through the Asian level and just wound up dropping the game. I never played American McGee's Alice for long but I believe the last level in that game was also a "meat" level.
Also, there was this horror game called Scorn that was released some years back. That had a meat aesthetic to it, too. I vaguely recall some VTubers were playing it back then.

I think it has something to do with the fact that the game was meant to be a way for Nvidia to flex what their cards can do. It's been a while but I think Nvidia PhysX was a part of Alice: MR's marketing. I think PhysX affected the hair no matter what its setting was and I am certain that you would get more particle effects in the game at higher settings as I vaguely recall, upon setting PhysX at "High", that Alice, upon double-jumping would produce flower petals that would perhaps cascade through the air gently towards the ground and the Ruin enemies, upon being attacked via slashing, would leave residue on the ground. Naturally, this is presuming you're playing the PC version.
It's possible that since Alice: MR failed to accrue Nvidia any extra sales, hair doesn't look like this anymore simply because there's no benefit to it. I wish to applaud you for your taste though. The sight of Alice, hair and all, moving on my screen at 60FPS was mesmerizing and I wish to see the return of such features. If I ever do get good at drawing, Alice is definitely a character I'd like to visit.
