They don't want their neo-nazi analogues to be competent, but they also need them to be powerful. So they have unlimited resources, even while each time they are on screen they are a joke, foaming at the mouth, or flipping out like an autist. The Empire in the original trilogy would eat both sides alive even with less resources, and even Grievous, as done by Lucas, could take them apart. Hell, Grievous had a more creative super weapon.

What is more, the ground battles in SW previously had set up and reasoning for why they didn't just use orbital bombardment. In the prequels, it was because most of the planets they were fighting on were planets the republic wanted back/protected, and the Dooku led armies were controlled opposition. So neither were particularly willing to bombard planets. The republic bombarding planets would have also tipped Palpatine's hand. Hoth had a shield above the base, making planetary bombardment ineffective at least short term, they could have sieged the place, but they didn't know the supply situation of the rebels, or if they had underground farms, etc. but the same question here is why they went to immediate ground battle instead of just letting most of the remaining cruisers bombard the planet while one goes off to get reinforcements.

Kind of. The empire in the expanded universe actually had gravity generators on their larger ships for this purpose. It could potentially prevent some ships from escaping or they would be forced to exit hyperspace near them. A lot of the lore even mentions that if your ship is broken in hyperspace, you may never leave until you happen to find another ship with working parts.

When Zahn took Interdictor cruisers from The Imperial Sourcebook he seriously considered the implications of them. In just the Thrawn Trilogy alone he explores how the gravity well projectors can be evaded and how they can be used tactically beyond their original intent to allow rapid tactical level movement. It makes sense why nobody thought of it before Thrawn: He's using them in the opposite of what they were intended for (against allied ships instead of enemy ones), and there were very few points it could have been used before the Emperor's death: Interdictors were rare and because in the Imperial navy only capital ships had hyperdrives there were few chances to use it as deploying multiple capital ships against the Rebellion was rare. It genuinely makes Thrawn come of as a genius.

When Rian Johnson makes Admiral Purple Hair do a FTL kamikaze there's no thought about how it works or what the implications are, it just exists.

It was still so fucking good, I watched all the seasons until they changed the artstyle. I couldn't stomach the downgrade so I stopped after that, but goddamn it really was fucking fantastic and hasn't aged at all whatsoever. One thing I really liked about it is despite it having strong narratives, character and world-building and powerful scenes in terms of emotions, it never skimped on the fighting which is really rare for cartoons these days.

I remember there would be entire episodes of pretty much nothing but fighting, and that shit was fucking glorious.
