Fats are a requirement and should not be avoided. Saturated fat is required in a certain quantity, Polyunsaturated and monounsaturated are supposed to be balanced to a certain quantity. Trans fats are poisons advertised as food. Think cigarettes in the 1950’s “nine out of ten doctors recommend” stuff like original crisco and partially hydrogenated vegetable shortening added to the human diet to cut costs. We replaced them with fully-hydrogenated vegetable shortening which is supposed to be safer but considering all things is likely just less poisonous. There is conflicting evidence that saturated fat is bad at all. Some evidence to the contrary suggests you should only eat saturated fat for the most part.

Regardless an ideal diet is high in fats with zero trans fats. Deep frier grease is fully-hydrogenated usually and I believe heating it up turns it into trans fats.
