Sure, and then you get soulless Minecraft and Smash Bros. It then becomes all about the competitive online-play-only neckbeard culture.
Sure, it IS possible to make a decent game with no plot but how long before you get bored since there's no direction, anon? Probably an hour or two.
That's the big problem with GTA V. Once you get done with the story, it becomes a soulless grindfest for money replaying the same missions over and over and over and over with the same weapons and armor.
It's good to have at least some immersion using plot to progress things. At the same time, a game isn't really a game if you can't control any input. How about a balance?

You dont need to have story tailored for you if you can make it yourself. One of best stories from singleplayer vidya i had are from CDDA where there is no story, you just make your tale as you go
