As far as allowing you to control centaur characters I know the original shining force had Mae among others. They appear in a few other games from the shining series but you don't really get to play with them for the most part. Personally, I'd like to see a game feature a centaur you could ride into battle. A dragon's dogma pawn system where you can train them to fight with a particular style would be rad as fuck but I'd settle for them being a ridable battle buddy.

The fastest and dirtiest way to get a proper centaur companion in the current year I think would be to take a human torso model and attach it to a horse body and plug that fucker into some form of Skyrim mod. As far as the coding aspect the human part could probably do well enough animation wise without too much tearing of the model with most weapons. I think you may have to make two separate "actors", with one being the human and the other horse so you could have the dialogue with the human part and ride the horse part.
That seems like the most simple option but I may be wrong. If there are any skyrim mods that have attempted something like this I'd be interested in seeing what they've come up with.

If you're dismounted your centaur would have increased mobility without your weight on their back and be able to charge, kite, or support you from a distance. Going on with the gun idea centaurs would be pretty interesting. On one hand they have more accuracy running and gunning with rifles than a rider on a horse. Since centaurs are the horse they have full control over their stride and learn to aim with it. Anything with guns can apply to bows and javelins as well.
Depending on breed a centaur's drawback is their size. They are easy targets defending against firearms. One shot in the leg takes them down. With medieval weapons armor and speed can protect them from arrows. We can have magitek-punk elements like forcefield armor similar to Phantasy Star's photon weaves. You wear a crystal and it protects your body as long as it has power. Also some magics can be cast with tools instead of words, gestures, and materials. Magic spell bullets are my favorite. That said a centaur may prefer a non-combat role like a courier or a medic transport. Unicorn having healing powers would also be an exception to pure combat.

This is irrelevant to topic. World of Final Fantasy lets you stack monsters on top of the main characters depending on their size (Medium for chibi, Large for normal). While stacked monster's HP, AP (replaces MP), are combined and core stats average out. I also just got to thinking of a LoZ game where the core mechanic was transformations akin to Majora's mask. This would mostly do the same thing; replacing tools and such for specific forms for the specific tasks. The concept was also touched on with the PS2 version of Altered beast.
