There's a lot to get through, but the hardest part is getting started. You can either start with the original LN, or its anime or manga adaptation. Bear in mind that the anime skips/rushes a lot from the original and gives a different feeling overall. If you start there, just watch season 1 and then read volumes 1-6 to see how they compare.

When it comes to the books just read them in order, with the first side story book after volume 13 and the second after volume 16. New Testament is the sequel series.

As for the spinoff mangas, you can read any them at your leisure by the time you finished season 2/volume 13 since they haven't crossed over to the main story past that point. The anime adaptation of Railgun can be watched after season 1 since it's pretty behind storywise (Railgun starts earlier than Index does in the timeline, and in S2 the story overlaps part of Index S1).

Going from the anime to the LN is what I originally did. Might be better that way so you can appreciate the difference and see how much more there is to things, though it might interfere with how it plays in your head. Only watch up to S2 though. Do not watch S3. It is the worst adaptation yet. It's far, far better to read up through volume 22 instead. Only after you've completed the original series should you consider watching it.
