AMI just reads your meter. At most, maybe they can use the data collected to see whether your computer or tv is on from the load pattern - but even that requires a bunch of analytics. Some of them can maybe talk to your thermostat (if you have a smart one) to see settings/readings from that. Note they use totally different frequencies and antenna specs from wifi or cellular (by design). They are basically incapable of spying on anything else.
