I want to get some older relatives into fitness, especially my mother. She's getting older and needs to stay healthier now. What's a good place to start? I want to get her a mat and some light weights, but I don't know what kind of exercises to start her on. Anyone have recommendations or maybe some decent youtube channels to look into?

This anon is right. Diet is a really big deal. Make the changes there first; the benefits of a good diet are far more substantial than the benefits of good exercise.
As far as exercises, I'm not old and I've never been old, but I'd imagine that variants of the big compound lifts we all love would work just as well for them as they do for us – they just need to use lighter weights and make changes to account for poor mobility, probably.
