All I'm looking for are adult-sized covers!

What do you mean adult sized? An ordinary single duvet is fine for adults and those are everywhere

I’m wondering now if you’re maybe in America where as far as I understand they don’t do the duvet with cover thing. You want to find a single duvet, then look up children’s duvet covers to go on it. Underwater themes are quite common.
