Why not just play the console exclusives? Also, it would be easier to recommend games if I knew what genres you like. Here's a few games I liked.

Kingdom Hearts: Birth By Sleep
Dissidia: Final Fantasy
Metal Gear Acid
Sims 2 (the PSP version has a story mode which is kind of fun)

Then Sims 2 is a must, I'd also recommend Silent Hill: Origins since it's not entirely like it's PS2 port. Didn't play the PSP version of Little Big Planet but that exists so you can try that too I guess.

Persona 1 and 2 Remake, these are just better that the originals in almost every way, the exception is that the Persona 1 remake has people divided on the music quality since it flat out replaces tracks rather than remixing them
P3P has some things that make it better than the original and some that make it worse, for example there is a redone version of the campaign where you play as a girl that even has a different UI. Navigating the town was changed from moving a character around a 3d space to basically point and click gameplay.
Danganronpa 1 got a full fan translation on the PSP that is better than the NISA crap on everything
Seventh Dragon 2020 and 2020-II are pretty cool dungeon crawlers, they are some of the best looking games on the system, pics related. They've both received full fan translations. Also Miku is a character and the openings for the games are Miku songs.
beyond that remember that the psp can play just about every PSX game natively so long as someone's converted it into an Eboot
also somehow they managed to get mario 64 running near perfectly on the thing about a year ago, it's the only n64 game that it can emulate well though

I bought a copy of daxter for $1 and what I played was pretty good, seems the game has a defect that makes it impossible to progress past a certain point in some cases though

Syphon Filter: Dark Mirror
Burnout Takedown
GTA: LCS and VCS
With Burnout and GTA it might've been mostly the novelty of getting to play "real games just like PS2" on the go, though I do remember them fondly.

Nice 3D Action-Adventure game (just get it undubbed. English dubs of anime or anime-styled games are fucking cancer)

Excelent and charming mix of rhythm and real time strategy game

It's fucking Metal Slug, with Ralf, Clark and even Leona. It's really fun.

It's Tekken, it plays nice and it's one of the best looking games on the system
>Street Fighter Alpha 3 Max
The best version of an already good game. Has a couple of extra characters.
>Castlevania Dracula X Chronicles
It's a remake of Rondo of Blood, that contains the original translated game, and a port of Symphony of the Night.
Also, you can play a lot of emulators (Genesis, NES, CPS1/2, NeoGeo, and most SNES/GBA) and old collections of games (Capcom Arcade Classics, KOF Orochi Saga, Salamander/Gradius Collection, etc.)

Nayuta no Kiseki is pretty fun. It's a hack and slash game similar to Ys Seven when it comes to gameplay.
If you want a game you can just pick up and play, Tony Hawk's Underground 2 is one of those games.
