uwotm8? You can grind infinitely in Kamidori since there's no time gated stuff except for NG+ side quests. You can carry 99 of each consumable for each battle if you want to. Outside of a few specific battles, you can just spam revive your units at little to no opportunity cost. The alchemy part of it is mostly meaningless there's no opportunity cost to it either, aside from the once-per-playthrough items. Besides, almost every recipe is earned by progressing the story, so there's next to no experimentation. Yes, it's fun. Not, it isn't good.

I think it is more Isaac desperately trying to stave off death that makes it worse. Most games, you fall over and die with a stinger to hammer in that you die. The one that really sticks out to me is the death where Isaac gets dragged into some fleshy pit, and they don't just have him get dragged in and die immediately, no, he manages to get out at least once and it is accompanied by that raspy gasping rather than screaming which somehow sells it more.
