Making it an adventure show like dragon ball in space isn't a bad idea. Why keep doing the same exact thing if it's not going to be called Z? I'm kind of iffy on Goku myself, but he's too strong for his own good and needed to be nerfed. You can see where not making him weaker can lead to problems as in Super. Where the only real challenge goku can face are people who are literally immortal or could be considered galaxy busters. All fights leading up to the end have zero tension.
Also, Super 17 and the dragons are really shitty villians. But Baby I'd say is only marginally worse than buu.

You are lessening what happened in Super on power levels and misremembering what happened in the Goku Black Saga. Trunks didn't kill Zamasu, after that spirit bomb like sword slash that came out of nowhere, Zamasu became a green screen of faces. He was destabilized but he was really going to them then and there. It was future zeno being called there that really killed him.
Also, your defending Super, a show where Trunks learned the Evil Containment Wave from a Piccolo youtube video? Did you forget they pulled out Super Saiyan Rose and Ultra Instinct? I think its clear that power levels are still the focus of the show. The biggest detriment to the show is a lack of focus on story or what it wants to be. Does it want to be slice-of-life or super serious because it's trying to be both the original dragon ball and z and its clashing with each other. But because they have made a god of destruction able to appear there at any minute, not being able to give anybody other than Goku new abilities to keep up, and since power levels are at god levels, there can be no tension even if a new villain shows up because they have to be at those god levels to be a threat. I don't mind if they stick with a more down-to-earth route but if they're going to have an actual villain, they have to deal with the problem of power levels they themselves caused.

It doesn't really matter why Toei wanted to call the show Z from the saiyan arc onward. GT (Grand Tour) was named what it was, because it was not trying to be what was just finished up. That's all.

This does kind of does matter though. Baby isn't really a big threat when he first shows up. He's actually quite weak. He has to work his way up and Vegeta was as far as he could go in terms of power and ability. And because Goku is a kid during all this he can't just beat Vegeta. So, nothing is flying off the handle here, so to speak. It leaves room for other characters to come in and do stuff as well which is good.
GT is far from perfect, but compare that to Super, which generally just repeats Goku and Vegeta taking turns fighting. Because no one else aside from beerus who has an instant kill move can really do anything. To spice it up they have to hold beerus back while occasionally pulling shit out of thin air to have someone else do something. trunk's rage form comes to mind, which wasn't even in the manga.
