It's only better by a small margin. Streamers are good because people can form opinions about a game just by watching the gameplay. But it's also bad because many streamers deliberately play games they know they'll be bad at for clicks. So you might end up with someone getting the wrong impression of a game because the streamer is shit at the game. For everything good about streamers, there's something bad. Which is better than journalists only because for every one thing good about journalists, there's 3-4 bad things about them.

Yes, it's better - if only because Bitch streamers are motivated by simple human greed. Journalists are only an ideological layer obfuscating the greed and collusion at the top. Publications are also monoliths which have much larger staying power than streamers who are largely just flavor of the month fads and can be dealt with easier via character or actual assassination if need be. Ultimately though, their personality is only a component of it, and streamers are popular because they say things that go along with or are compatible with the prevailing narrative as it's cultured in the consumer base. They're greedy fucks, so they're not generally going to sabotage their bottom line by going against the grain. Publishing companies are just aspects of much larger media conglomerates and will get financial insulation or even large grants from charitable trusts for pushing a particular narrative in a way to shape public perception.
Streamers are still forced, to a much greater degree, to cater to the tastes of the consumers - so they're naturally a less malignant cancer than outside entities manipulating public discourse to meet their agenda.

This already happens. The majority of big-time streamers mostly play games they are paid to play by marketers. Some of them are up-front about the stream being sponsored, like when Ninja, despite the massive shit stain on the underwear of society that he is, played Warframe, and subtitled his stream as sponsored content. Then there are people like Quill, that pony-tailed faggot who plays almost exclusively strategy and strategy-lite games. When the whole GG thing was at maximum blaze, he came out and said to assume that all of his content is sponsored and that he doesn't give a shit about separating it. You have to assume his content is all one big commercial. Imagine how many streams or youtube videos you've watched that were actually just commercials. When you watch someone play a new game, and some sort of outrageous bug occurs on screen, but they immediately look away and pretend it didn't happen, they are 100% being paid to make the game look good.
That only touches the surface though. Total War developers gatekeep their youtubers, only allowing pre-launch access to a few vetted boot lickers. That ensures that those people will always keep the views and that it's harder to break into that scene, or even just be critical of them. Paradox, Creative Assembly, and a few other big western developers let only a select few into their offices to play a game pre-launch, but you have to record your footage there, and they vet all of it before they let you have it. Bethesda sent out Fallout 76 power armor editions to their most vocal critics, attempting to just buy them off. There is an enormous list of streamers who have done some heinous shit that resulted in innocent people getting banned or punished, while they tend to get off the hook due to the fact that they're "figureheads" for certain peoples games, and a lot of companies don't have the balls to do anything about them. And that's barely scratching the surface.
