I'm sorry if this isn't the right board to ask about this stuff, but I'll bite.
I've heard that there's special regulations regarding what kinds of food a Muslim can or cannot eat, more specifically there's some certifications that attest that some piece of, let's say, meat is halal and safe for consumption by Muslims.
1) What are the names of these regulations?
2) Do they hold for all nations and for both Shia and Sunni?
3) How do most Muslims living in non-Muslim nations shop for their groceries?

The legal fiqhi (juristic) method is called dhabiha/zabiha (ذبيحة) which deals with animal slaughter.

Most muslim majority countries hold to it for all sects.

There's usually a halal shop nearby or we can also buy kosher meat (or christian meat, which is very rare) if we have no alternative.

I'm gonna add that every food other than (land animal) meat is always halal, that includes fish/veggies/fruits/nuts/dairy/eggs ect..

Anything that grows from the earth and from the sea that is edible is halal. The only food which has exceptions is land animals.

Some companies exist, like 'zabiha halal', but it's more often small local business like muslim butchers or a halal convenience stores that are run by muslim immigrants.

Generally, if it's vegan or vegetarian it'll be halal. Fish are halal regardless of sacrificing but there's a difference of opinion on shellfish. Food that contains gelatin usually isn't halal, but some manufacturers use pectin instead which is fine. Kosher meat is halal, since as far as meat is concerned they're the same standard. Eggs, milk and other animal products that don't involve killing the animal are considered halal.
If there are enough Muslims in an area, shops start to pander to us. I live near halal fast food chains, and the supermarkets stock halal meat. If those weren't there I'd just eat more vegetables, or go for Quorn and other meat-free substitutes.

Since the only thing that is driving my (Christian) hometown's business seems to be Islamic immigrants and tourists, we're trying to branch out and cater to their needs. It's a common complaint they have that they need to walk into the much more dangerous city center to buy their goods, where they either get shanked by the Sri Lankans. Indians may stink to high hell, but the Sri Lankans are vicious animals.

If they have a halal menu it's probably overseen by a muslim at least. But everyone should avoid fast food.

It's a KFC, so they never served pork in the first place.
There are a few halal McD's chains somewhere but I haven't been to them in a very long time.

I beleive they are the same fo both Shias and sunnis however I'm not sure to what extent these methods are enforced in Muslim countries
