I agree with you except for one thing :
GNU IceCat is the same project as IceWeasel (the debian version of the project), but the gnu.org page about IceCat doesn't state AT ALL that IceWeasel is worse, actually it's the same kind of freedom that you'll get.
But IceWeasel is more up-to-date (IceCat is at version 31, and IceWeasel latest).
Which brings, among other performance bugfixes, privacy bugfixes.
