Because you can't project an image onto thin air. Even IRL "holograms" are just projecting onto glass or are just a specially etched piece of glass. Now, transparent and semi-transparent LCDs that give a similar effect are actually somewhat viable- the only issue is that the electronics need to go somewhere in the device and aren't see-through.
