As others have pointed out, you don't have to go fifth level vegan ("I don't eat anything that casts a shadow").
There are tons of great things you can make that are ovo-lacto vegetarian (milk, eggs, plant sourced foods). Throwing fish into the mix (pescetarian) does wonders too.
Surprisingly easy to shift to some sort of rationing system; get meat when you go out to eat (but not more than once a week, so make it count - medium rare bone in ribeye), otherwise keep rational portions (2-4 ounces red meat) every other day or so.
Ruhlman's recipe for onion soup should remind you that it is still possible to have excellent vegetarian food that is worthwhile… even if it does take all day to cook it.
