I fear my love of cooking delicious food trumps my desire to become vegetarian, and that I might have been too idealistic in thinking vegetarian food can compare with paella, goat curry, pork and veal meatballs, or pic related.

It's like a 49/51% balance of wanting to cook like a wizard, or shitting on big business and the animal agriculture industry and being exalted as an eco-terrorist.

I just really, really like cooking, but also really like not shitting up the planet. Please try to push me one way or another off the fence, my proverbial pants are caught.

No but really, i kinda agree but doesnt your area have any small farms or such you can get "economically and ethically" raised meat?

Maybe if there's any butchers shops in your area, ask there? I did and their meat comes from small farms close-by and they even supply few bigger markets in my area so the meat is pretty ethically raised, happy cows'n pigs and that stuff as long as i buy fresh meat (not vacuum packed or premade meatballs etc) i'm "helping" the local economy and making sure my money goes to people and farms that try to actually give a shit.

Then again might just be perks of living in small Yoropoor nation instead of MERICA FUCK YEAH with it's "meat fuck yeah bbq-texas yeee haaaw!" culture and customs. :^)

If you're too afraid of giving up the stuff for good, just limit yourself. Have maybe one or two meat meals a week/month. If you really have a passion for cooking, you'll find that the less meat you can use, the more you'll find creative ways to put protein on your plate. I've been a pescetarian most of my life. So yes, I do still eat fish and seafood, but even that I only have it one or two days out of the week. It's unrealistic to expect everyone to give up meat completely, but they can easily be more conscious about how often they eat it.

As others have pointed out, you don't have to go fifth level vegan ("I don't eat anything that casts a shadow").

There are tons of great things you can make that are ovo-lacto vegetarian (milk, eggs, plant sourced foods). Throwing fish into the mix (pescetarian) does wonders too.

Surprisingly easy to shift to some sort of rationing system; get meat when you go out to eat (but not more than once a week, so make it count - medium rare bone in ribeye), otherwise keep rational portions (2-4 ounces red meat) every other day or so.

Ruhlman's recipe for onion soup should remind you that it is still possible to have excellent vegetarian food that is worthwhile… even if it does take all day to cook it.
