I actually made a pretty decent Ham and Cheese Croquette with Panko today.
I wasn't planning on using panko, but my mashed potatoes where too smooth and moist and even using extra flour didn't help. Basically is is four cups of mashed potatoes, cup and a half of finely diced ham, cup and a half of grated cheddar cheese, 3/4 cup flour, and salt and pepper mixed together. Dusted my hands with flour to handle the mix and then formed 1/2" thick patties that I coated in panko. I fried them for four minutes each side in vegetable oil and served them with Honey Mustard sauce.
All in all it came out much better than I was expecting for a recipe made up of Christmas leftovers, and my roommate loved it so much that while I was in the bathroom he went into the kitchen and tried to fry up some more instead of waiting for me to come back out and drunkly tipped the pan causing a minor grease fire.
