I cut out all simple carbs like-

because they make me get very fat very fast
I still eat oats because they don't make me gain weight
instead I eat complex carbs with color like black beans or dark red kidney beans, and I eat loads of raw nuts and seeds and avocado and cold pressed unrefined coconut oil. I never cook fats because that turns them into bad fats and it makes me gain weight.

so basically, organic became popular because it offered quality and safety at better standards below the badness level of the original conventional varieties. people eat organic because they want to eat as close as possible to what was originally normal for thousands of years. it's not perfect, but it's way better than being guaranteed to eat loads of poison.
many people have difficulty navigating wholefoods without getting screwed. you just have to be honest and straight forward with yourself and be patient as you look around the store. organic oats are a good deal at wholefoods. organic peas are okay price but could be better. organic canned beans are an excellent price. organic dry beans are an even better price than canned but you have to cook it yourself.
