I'd recommend Dan Jones book on the history of the Templar. I was surprised at the more sympathetic nature of it, given all the naval gazing about conspiracies and "Islamophobia" that usually plagues the discussion. It's concise (about 350 pages), very well written and paced narratively speaking, and surprisingly sympathetic towards them. as it should be, given their unjustified and frankly tragic end Picked it up on a whim from B&N for only about $15 and I was impressed.
There's also an increasing amount of free resources pertaining to them. I'd recommend checking out Real Crusades History on YT. It's a pretty exhaustive, generally accurate channel on the subject. not to big on his theological views though
