If it is a high-church service (ie, a liturgy), it normally goes:
- Reading of the Old Testament
- Reading of the Epistle
- Reading of the Gospel
- Homily
- Great Entrance (the bread and wine, and the faithful, are taken to become an offering to God)
- Anaphora (thanksgiving and remembrance for what the Father, the Son, and the Holy Spirit have done for us - it is during the remembrance of the Son that the bread and wine become the Body and Blood of Jesus in Catholicism, while it is during the remembrance of the Holy Spirit that it happens in Orthodoxy)
- Fraction (the Body and Blood are broken and presented to the faithful)
- Communion (the faithful eat and drink the Body and Blood of Jesus)

If you have no clue what is going on, maybe just sitting and observing is wise, you know. Besides, if you're not already trying to join that church's denomination, mingling with the faithful is a bad idea IMO as it makes it seem like there is any spiritual communion between you and them.
