I'd say it was more a matter of cultural continutity after the second temple destruction and allegiances among disapora Jews that perdured up till present times along with the associated doctrinal traditions instead of being soley focused and based on the rejection of Christian theology.

I don't know how a jew reading the OT can go over all of these and not get redpilled. Daniel predicts Persia, The Greeks and the Roman Empire. Seven sevens and sixty-two sevens (7 times 7 years, plus 62 times 7 years) is 480 years until the coming of the Messiah who will then be put to death he will establish a new covenant and then the romans show up and destroy the temple and war continues which is the siege of jersualem by Titus in 70 ad. How do they deal with this happening and still rejecting Jesus Christ?

The crystallization of non-judaization in Christendom might have resulted in the further unification of Jews into churches being hindered. Jews before the destruction of the second temple appear to have been more open to cultural syncretism. Afterwards they seem to have adopted a stronger anti-Roman and anti-Christian position. What Jews did join churches during the beginning centuries of Christianity probably joined their local Greek and perhaps Syrian Churches and Egyptian ones. After all these years though it's kind of hard to convince people who believe themselves to be of the Biblical covenant to convert without a comprehensive plan for the incorporation of their traditions and doing that is problematic as well. That's why there now are Messianic congregations.

Isaiah doesn't have "son of man" it's Daniel 7 the dead sea scroll version Isiah is virtually identical to the bible tho and it's a lot older than the Masoretic Text
