What kind of animal is best for detecting or otherwise alerting humans of supernatural phenomena?

I remember hearing a few times that cats are good to have around to keep away evil spirits but I don't know if there is any truth in this. Dogs are shown often in videos at barking or staring at what the viewer believes is a ghost or something else. Besides a cat or a dog, there really isn't any other pet that would be a good yet practical supernatural sentry. Dogs are more sentry-like by nature so that may be your best choice.

Cats and dogs work. The difference being, the dog will alert you to WTF goings on faster than a cat would. When any of my dogs got fixated on something not there I take out my phone and start recording and ask questions. Before the advent of smartphones, I used a boombox tape recorder. Only once did I ever catch something on tape, and that was 30 years or so ago. Also, they proved recently dogs can see magnetic waves, a bit like birds, so they can see stuff we can't for certain.

Some dogs can detect cancer and one cat named Oscar is well known for predicting when people at a hospital would die. Hearing that dogs can see magnetic waves is really fascinating because it makes me wonder if there really is a connection between cancer and the body's electromagnetic field.

Do you remember Paul the octopus? It's funny how people stopped talking about him like some kind of cognitive distancing. His Wikipedia page mentions another psychic octopus named Rabio as well. If anyone here is allergic to cats and dogs, you might be interested getting in a pet octopus and train it to push the paranormal alert button.

Have you never wondered why most spooky innawoods stories typically set the scene by having the forest fall dead silent all of sudden - i.e., having the birds STFU on the double?

Because that's what they do. It doesn't necessarily apply to larger and especially social specimen (parrots come to mind), who will freak the fuck out so as to warn their family (and a well-treated parrots considers you as its family, jealousy issues included), but most smaller birds will just keep their beak shut and hope the nasties will go for someone else.

The main downside with parrots in particular is that their instinctive behavior does not really make them suitable as human pets, especially if you make the mistake of keeping a lone specimen instead of a pair. Consequently, many pet parrots are psychological wrecks that will keep screaming regardless of whether or not something foul is around.
