I can only comment on the ones for Sega consoles, though. I also played the GBA titles, but not thoroughly; I kinda left off after that.

All of the Genesis games, as well as Sonic CD and Knuckes Chaotix.
Sonic 1, Sonic 2, Sonic 3, Sonic & Knuckles, S&K combined with 2 and 3 - I recommend all of them. But that does without saying, really.
Sonic CD tends to be a little overlooked, but I can't recommend that one enough either. It's a bit rough around the edges compared to, say, Sonic 3. But it's also by far the most ambitious Sonic game from back when Sega was still making consoles. It's also a good deal harder.
The spinoff games are generally worth playing as well. Never actually got that far with Knuckles Chaotix, but it's definitely a good game. The same goes for Sonic spinball and Dr. Robotnik's Meanbean Machine (even though the latter isn't even a platformer or anything).
The Gamegear/Master System games are… an acquired taste. They're not bad - but the 16-bit games still hold up pretty well, and the 8-bit games, well, don't. Unless you have a thing for 8-bit games or you're just curious about them, I wouldn't bother with most of them unless you're really bored.
But there's one exception to that: Tails Adventures. This one's a hidden gem, and it's actually one of the best games in the broader Sonic series.

Sonic 3D Blast. For some reason, almost everyone hated it, and people still love to shit on it to this day.
But the truth is, it's a really great game. And it's also one of the most polished 16-bit games out there. But it's isometric 3D-rendered instead of a platformer, so it's entirely different kind of game from the other Sonic games of that era. I'm guessing that a lot of people just couldn't get used to that that's what you get with such an autistic fanbase, but personally I loved it.

The Sonic Advance games. I actually wanted to like them, and they're reasonably polished. But… they're just shit.
I can't really put my finger on it, but something about them just doesn't work. They just don't have the same energy. And bringing back Knuckles as an antagonist and having him get screwed over by Robotnik again, that was just stupid. Just do a port or remake of Sonic 3 & Knuckles of you want to run that kind of plotline.
And from what I've seen, these problems with the first GBA games set a trend. Sonic Advance 1 and 2 felt kinda hollow and formulaic, and I've seen people voice similar complaints about a lot of the later games.
But like I said, I can't comment on any of the games after that. I'm so stuck on the old Genesis games that I even still think of the Dreamcast games as "that new stuff".
