There’s a lot of them and with the remakes it convoluted things a bit.
What are considered the “good” games in this series and which are the best versions of them?

Also, is paper jam as bad as people say? Going through TYD now and absolutely loving it and know I’m going to want more once I’m done, though pretty much every Paper Mario after it seems to be a trash fire.

Paper Jam is the worst kind of bad, it's boring. Play Paper Mario or Superstar Saga if you want more after you've finished TTYD.

Yep, Superstar Saga was the only other one I played back in the day and really liked it, but just never got around to the others.
Shame about paper jam, but when even the fanboys give it a bad score I guess it really is as bad as it sounds.

Paper Mario aka Mario Story is the best one, don't let others deceive you.
Also fun fact, Super Paper Mario's name is the same in Japan. It's technically not even part of the Paper Mario/Mario Story series.

Bowser's Inside Story is pretty okay despite the main plot point being mild vore shit.
The game's actually hilarious, every time Bowser has to get giant to fight something, you have to go to his "adrenaline" gland (which is, for some reason, in his groin) and do a minigame where you're shooting balls at energy balls, you have to force feed him to get to his Body Fat Zone and half the game is playing as Bowser as he awkwardly interacts with everyone while still trying to be the villain. The game basically starts with Bowser literally eating everyone and I'm still not sure how they made a plot after that. There's just so much blatant fetish inspired shit in it but it's still for kids.
If you want some actual difficulty, though, Partners in Time is probably the hardest game from what I remember, mostly because of the baby party members changing up the inputs and making dodging more complex.

Superstar Saga is the only good one.
Bowser's Inside Story is ALL fetish shit on top of being a linear tedious mess.
Partner's in Time is just boring and 40% of Dream Team's playtime is mandatory tutorials.

Funny thing is, TYD emulates perfectly as well which can be rare for first party Nintendo games.

Should I go for the original or remake?

With Bowser's Inside Story, go for the remake.
It's got more content and a few bosses got buffed and rebalanced.

The American version of PiT was released first and is harder than the other versions, the pal version has the same difficulty as the japanese version.

N64 emulation has been very good for a while now, at least with all the popular games I've tried.
