None. They are just names at this point. I heard story of seasons was decent, but it was blown out by Rune Factory, and there are better alternatives to life sims like Fantasy Life.

What did the Harvest Moon/Story of Season games even change over the years? Like besides having to tend a farm with the same farm animals and form basic relationships with NPCs. At least Stardew Valley and Rune Factory you have monsters to fight.

A New Beginning is good
Haven't touched any of the Story of Seasons game yet.
Tale of Two Towns could've been good if it wasn't so glacially paced.

Friends of Mineral Town is kind of an updated remake of Back To Nature with 10% of the content locked behind linking your game with the awful Gamecube game that is A Wonderful Life. It also has an awful official translation filled with typos and new and inventive ways to misspell basic words. The US version also fucked up the 4:44 easter egg as it now causes a softlock.
The GBC games are weird. The first one is just a rerelease of the SNES game but with certain things changed and the second and the third ones have this bizarre gimmick of locking half the content behind your player gender so you can't take care of animals well as a male but you can't farm properly as female.
If you want to extend your criteria to DS then theres Island of Happiness and Sunshine Islands. They are different games but with same characters. Island of Happiness only has touch controls but in spite of the that both are very good and worth playing.
You could also give Harvest Moon DS a try which is a janky mess but kind of fun in its own way. It takes place in the town of A Wonderful Life except it feels hundred times more alive.

So I started playing Story of Seasons 1 and its pretty good.
Unlike the Harvest Moon games before it, progression isn't completely tied to time spent but rather the amount of things you ship. You can rush to get the seed maker in the first month of the game and talking to NPCs isn't a chore of guessing which part of the map their random schedule takes them to.

Yeah but its exceptionally egregious in Tale of Two Towns. You can upgrade your tools only once every month, same for house/town upgrades. So you have to slog through hundreds of hours to get field upgrades because you still have to progress through each upgrade incrementally but by the time you even get to upgrades you want, you'll be done with the game in both marriage and story endings. Then theres also the fact that there are two different farm towns each with different capabilities,festivals,people and entirely separate upgrade trees so you'll be spending even more time of slogging through months to upgrade them.
It really sucks because that game has some of the best farming mechanics that have never been brought back again. Instead of making set squares you can dig channels and link all crops together allowing you to water them all with a single button press. Instead of sprinkling fertilizer every day, you plant a fertilizer stick which automatically increases the star rank of every crop around it and in the same channel by a set point. You can stack multiple fertilizer sticks and get 5 star crops in a week.
The whole feeding treats to cattle to multiply produce and pets to automatically take animals in and out started there.
