What old ass version of Dwarf Fortress are you even talking about?
You are so far out of the loop, it's obvious you're talking out of your ass. Tantrum spirals have been fixed for nearly a decade which is why some people are complaining it's boring now. The only spirals that happen now is the new(ish) loyalty cascades. All complexity in Dwarf Fortress is the pathfinding, especially for the working water physics, constant checks for wear of objects, civ interaction with other civs, working physics with Mine carts and setting up power for those minecarts, etc. if you're a coder you'd know doing something with millions of objects interacting like that is going to be complex and take time.
Nethack has even less complex physics then Dwarf Fortress and all the time developing it comes from constantly adding new features, adding new interactions with current mechanics. The detail is so meticulous that even with a team it's taken them over a decade.
