For Ultima VI I recommend Nuvie, it's a modern re-implementation. It adds a number of modern quality of life improvements, including an (optional) better interface.

The new interface really saves the game in my opinion and makes it quite fun to mess around with. Ultima IV and V play decently well, at least until you have seen most of the world and the combat starts dragging on you. Combat is the one thing that kept getting worse and worse as the series went on. The interface of IV and V is not great, but there is not much interface to fiddle around with, so I find it tolerable.
In my opinion, I and II aren't really worth it, play them only if you are curious. Ultima III is where it actually starts getting good, but the age shows. Worth giving a try if you want to pirate it. IV is really unique and freeware, so definitely give it a shot. V is a lot like IV, but incrementally better. VI is the peak in my opinion (when played through Nuvie). VII was a disappointment for me, too much fiddling around with the awful inventory, zero control over companions (and their AI is shit), it makes me dread any combat. It has a very good story and unprecedented world interactivity, but I wish all that effort was also put in the rest of the game. VIII and IX are unfinished messes.
