Well standard practice is to not take agency away from the player without warning. So even if you can make an enemy that sneaks up on the player in a perfectly doable manner the sudden attack on the player makes devs really shy away from that as a mechanic. Notice that in games where the enemy can do it there is always something that warns you you're being stalked or followed.

That's a Boar m8, the chink with that shovel could've been going to the gym and be part of weight lifting tournaments for all the good that would've done. All that would change is that when he gets a good hit with that shovel it would feel it enough to divert it's attention to him and then kill him. He couldn't do that, but he could grab it by it's back legs and drag it away. The icy road would have made that tough, but that is how farmers control domestic hogs occasionally. They can't get very good traction with their front legs only, and they are too bulky to spin around and bite you. Once you grab their back legs, you have to keep pulling backwards, otherwise the kicking would be too much to handle. If you to this right it would give someone else to opportunity to kill it. That chink was too scrawny though.
