Actually Throgg isn't just crafty for a troll, he's legitimately clever even by human standards. He was intelligent enough to understand the value of works of art and form tactics and strategy. Apparently GW gave CA the okay to do whatever they want though so I guess we're stuck with this version of Throgg.
What games have weird trolls? The Dominions series has regular trolls with stony skin and regeneration, water trolls that live in the sea and have softer skin, and forest trolls that have mossy skin and druids.

I had a very fun Shadowrun campaign as a group of Trog supremacists. "Trog" is basically an ethnic alliance between orcs and trolls, as the most hated metahumans in society. It was filled with ridiculous shenanigans, like getting orc rappers to perform drive-bys by telling him his most hated nig-I mean trog rival was performing at a venue, helping an orc arms dealer annihilate a faggot (literally, they're leather-and-chain deviants) biker gang in a fake sale, and simulated troll speak by shoving two fingers in your mouth for tusks.

They turn to stones when exposed to light yeah, but as for how they actually came about no one really knows since Melkor didn't have the power to make living beings only to corrupt them. We can only guess at what creature was used to make the trolls.
Them being turned to stone in the sunlight is just an adaptation of Scandinavian lore which has trolls that turn to stone in the sunlight

My understanding is there are different kind of Trolls, with only one kind being the sort to turn to stone in daylight. I'm pretty sure Tolkein did a fair bit of soft-retconning when he decided to write a more serious follow-up to the hobbit.
