I find this too. Well, it's been a very long time I haven't play OOT on N64, but from memory and from seeing youtube videos of it, the atmosphere was significantly different and much more "sober"/"classic" and less "toon" (Like the Pic of Hyrule's market above).
The other thing to consider is that in OOT, texture were "ugly" but not only that, some environment were just 2D pictures (like in the houses or in the Market place or in front of the Temple of Time, …) while the Remake is fully 3D modeled. This drastically change the atmosphere and Art Direction of the original game (which is to be expected of course, the 3DS remake is spectacular, just wished they took less artistic liberties). And that's why OOT N64 is one of the worst game to emulate and downscale with this 2D Jpeg environments. I don't know about you, but those 2D pics really gave an unique vibe and soul to the game (the 3DS version also as a strong Soul but it's different).
Might I add that I likes the inventory from the N64 version, visual and in terms of sounds noises it does, it really feel like "magic".

I will totally accept the gyroscope aiming which is very good, maybe too good in fact but I won't complain.
And who knows? Maybe the fact that it ran on 20 fps on N64 gave it some charms ? Something I liked about the 3DS version is one specific instance where you Shoot the Light Arrow in Ganondorf and the game takes a very strong (intentional?) frame rate drop /slowdown and it gives a strong sensation of strong and power.

Really, I think if you want to experience the original feel, you should go to N64 or to a N64 emulator WITHOUT improving resolution or any other graphical settings. As for the 3DS version, it's very great and Soulfull to do it on a 3DS…However, for this version, I would recommend to do it on Citra on 4k Internal Resolution directly. I think that the 240p of the 3DS holds it back (even if it's great on the small screen but this remake is at fully potential with a PC emulator)
