Be polite to your enemy.
They're bound to rely on fake threats to claim they did the right thing, don't give them ammo with real ones. Be logical, cold and concise.
The real money-maker are devs of franchises that do well on PS or have exclusives (Square, Platinum, etc). Write to them and explain you won't buy their games on Sony systems due to this.
When writing any email or letter, remember Ingo Montoya.

Polite introduction, who you are, what your intention is, and what you hope your correspondence will achieve. The latter isn't so relevant here since it's more a notice of your intention and action on their part is almost unexpected.
"Dear Mr." if you know it's a man, "Dear Ms." if you know it's a woman but don't know if she married, "Dear Mrs." if you know it's a woman and that she's married. If you don't know the name at all "Dear Sir or Madame" is usually the go to.
Introduce yourself, then show off that you are a consumer. "I am a gamer who typically buys new titles every X months". This is done to establish you do used to give them money or potentially would. If you don't, lie. No photos of game boxes is necessary, they're unlikely to open random images from someone they don't know, if it wouldn't be filtered out anyway. The other reason to intro yourself is to give a little context beyond "I'm Dave Smith".
Explain why you are writing to them. Remember, be polite and logical. A trick of formal writing is to use no contractions (I'm = I am, we're = we are). Here is where you explain why you are dissatisfied.
Thank them for their time/reading the message, and state you hope to hear from them soon. You never will, but it's polite to leave that door open.
You sign off with "Kind Regards" or "Sincerely". You aren't a raging lunatic threatening to dox someone because of the content in a video game. You're letting them know you will not be buying, and you are showing you have no malice or ill-intent to the company or the person you are writing to. You then finish with your name (no Mr. or Mrs. in front of it, you only put up Dr. if you have a doctorate).
Now, you're probably wondering why you're bothering to write to a company that clearly has no intention to undo it's decision.
A) They're deluded into thinking everyone likes this. Showing just how many will generate bad PR will make them act in fear or anger- both of which leads to errors on their end (exposure, haste, and lies they can be caught on).
B) Shareholders will want to know why profits are less than expected, or why there is so much bad PR online about them. Company emails aren't as secure as they hope (especially Sony's) so if they attempt to hide these emails from shareholders, it will end badly. Not to mention it tempts individuals who don't like this to leak info. Speaking of
C) It puts a crack in Sony's PR image. If Sony keep getting people angry at them in every youtube video, tweet, social media post, etc- then their brand as a whole takes it a hit. Just like other bad devs before, you point out they have no clothes and they then can't hide it once other join in making fun of someone above their station. This sours the mood internally, tempting brighter minds to abandon ship. This leaves Sony with the worst and the woke. Something that'll eat away at their quality over time.
Nintendo had nearly a generation of people mocking them over Fire Emblem and Bravely Default's censorship- nearly every comment section had someone talking about it. Now Nintendo and even Steam are open to the idea of free money from freely created content. Make Sony the minority by showing it is unprofitable.
