Only a fraction of their land is actually usable and ignoring how much they're wasting it, they don't have enough space to feed their own population whose diets are growing more and more westernised (which require even more land to raise animals and food for them).

Because of this China is completely reliant on buying land in foreign countries to set up farms, as well as importing food. Even with overly generous trade arrangements towards China the US alone makes like a billion dollars a year exporting food to China.

They go to war with the very people who are actually feeding their citizens and they'll need to decide between letting their people starve en masse or drastically reduce the living standard in China as we seize control of their offshore farms/stop exporting to them.

I don't think any side would be crazy enough to bring out the nukes right off the bat. They'd likely first try to smash each other out by conventional means, though if one side was losing too badly nukes would likely be employed. Then again, maybe they'd play it out like Korea or Vietnam, where armies would be forbidden from crossing a certain border to prevent things from escalating just to ensure nobody gets desperate enough to unleash their nuclear arsenal.
