If you mean "why do I try to go so many spaces further when I'm already past the finish line", it's a little bit BM, a little bit assurance that if someone else is holding onto something to pull me back or kill me that I gain enough ground to not lose the win.
If you mean "why don't I end the game sooner if I clearly have enough stuff to win", I don't pull the trigger unless I think it's safe. I count up all the things I have stored up to move me forwards, but if it doesn't give me a decent margin ahead of the line, it's not safe. I'll take a turn or two to make sure I get to the shop I want that will give me the spaces necessary to cross. If I move too soon, I risk someone doing something to me to keep me from winning, which leaves me without the win, without the element of surprise, and without anything to move forwards anymore. I don't drag the game on needlessly, but I don't try to end it sooner than I feel is safe.

On the turn that I finished, my roll was 10, the rocket boots moved me about 10, the grenade moved me 5, and the pogo that I used twice thanks to the Spanner moved me about 22. That's 47 spaces. Without those, I couldn't have crossed the finish line and won the game. You could say that I would have had enough on just the roll alone, but if anyone had been holding onto something like a Tractor Beam, that would have been enough to keep me from winning.

Yes, the last two are similar, except that the amount of Food to eat in order to win is different and the last one doesn't exist in the Play Game tab for me for some reason.
