MaOCT is a pretty neat little game theme-wise, but I found myself put off by the sometimes conflicting sense of setting in the rulebook. Sometimes the game acts as if monsters are a sort of unspoken secret to everybody and other times they're something only kids know about and adults cannot possibly comprehend. I'd probably go with the second one and run something that would be a little more 'grimbright' with things being fucked up, but ultimately things turn out for the best.

I just had to drop out of a MAOCT game because the PDF was a bit too confusing.

Or rather, too lackluster, it explains certain things to an extent and then just expects you to know the rest from previous books it doesn't properly references.

Regardless, DM began homebrewing random rules and halfway through that I decided to bail.

Honestly, it's a bit too freeform for so many things, for example the number of bodyparts a monster can have, by only doing four bodyparts you could made a beam of death by stacking gnarly almost ten times on top of itself, along with adding awesome for good measure.

The problem is that while I wasn't, others were.

I had suggested to make the minimum body parts to five (so a maximum of 10d per bodypart) but it was shot down.

Hence, I left, no point in staying in a game where both the players and the DM try to go for min maxing if I am not willing to do the same.

Unfortunately, if you've got even one character in a game who is an absolutely broken murder-machine and others aren't, it fucks things up. Encounters need to be made to accomodate someone who can OHKO anything they fight, which means you end up with enemies that can murder anyone in the party with a reasonable and balanced character. If the GM is adding to the problem by not stopping players from overpowering themselves, especially in a system like MaOCT, then they need to at least be told what kind of shit they are setting everyone up for.

When you use multiple bodyparts as a monster do the bonuses from each bodypart stack, since you're using the same die pool?

For example, if "Bite" and "Claw" both have "Gnarly 1", does it turn into "Gnarly 2" for each attack you potentially make?

Otherwise, if "Bite" has "Gnarly 1" and "Claw" has nothing, does "Claw" also gets "Gnarly 1"?

The rules for taking multiple actions need more elaboration, but I believe that each separate action you try to take when attempting multiple actions requires its own matched set in order to succeed. So the qualities on the hypothetical monster's 'Bite' part would apply to the set for the Bite attack, and the qualities for the 'Claw' part would apply to the set for the Claw attack. If both parts have Gnarly 1, this does functionally become Gnarly 2 if both attacks are directed at the same target and they both succeed, but you use whichever part has the lowest dice pool to figure out how many dice to roll, and you subtract one die per extra action taken before rolling, so there's a definite trade-off in accuracy.

If you want a monster that uses multiple attacks in the same round, you want high dice pools and the Spray extra on all parts it will be using to attack, and at least one part having Awesome x2 would probably be helpful as well.
