honestly Sheev is a good name for Palpatine. He comes from a planet where names such as Padme, Quarsh, and Sio are normal so Sheev isn't all that strange. Sheev is also pronounced pretty close to "Shiv" which is something you can use to backstab somebody, which Palpatine did all the time. To add on to this, Sheev is also pretty close to "Shiva", the destroyer and transformer in Hindu legend. Sheev is one of the few good things that came out of NuWars.

Yes, Palpatine boasts at Yoda that Vader is going to eclipse both of them, but the context of the EU after that implies that he was disappointed with cyborg Vader and already scheming up a way to replace him. Then his actions after the RotJ infer a character who never intended to die, would casually break Sith doctrine and tradition if it suited him, and didn't need a contingency involving purging the Empire because he arranged the pieces to fall apart without him anyhow out political interest.
Again, this isn't to say that I think Lucasfilm under Disney is going to head in the right direction but to be honest about one of the problems with EU consistency. Palpatine had a lot of juxtaposing, incongruous lore written about him because G-canon regularly introduced important new facts about his character. Nobody used to even know that he was Sith or what the hell a "Sith" actually was when he was appearing in early EU media. Now with most of the supplementary lore on Palpatine coming from "Tarkin" and a couple of Darth Vader comics we don't have to reconcile his apparent Sith fundamentalism with what he did during Dark Empire, TFU, etc.
It's how a reboot should work to the advantage of a mythos that had a few kinks in it thanks to the tiered canon system and absentee landlordism of its creator figure, but Kathleen Kennedy and her girlfriends would rather make the Dianoga sapient instead of paying the people created the best received EU lore to iron out the wrinkles.

That really is the only primary problem with the EU. It was so massive with so many different writers all with their own idea of how certain characters should be because due to the size of the EU there's no way they'd have read all of the supplementary material already made. Consistency in both character motivations and quality was the big issue with the EU but I don't think it was worth throwing it all away and I think we can all agree what we got to replace it isn't better (and in fact much worse).
