on a ship like this doing constant exploration and whatever else starfleet assigns it to do 24 hours a day, shoulnd't there technically be three sets of senior crews (ie three captains + senior staff) working 3 shifts of 8 hours each, on account of the fact that the day/night cycle doesn't even exist? or does the enterprise just go hide in some neubla to idle for 12 to 16 hours when picard and the rest of the senior staff finish their shifts?

yes but technically the "night shift crew" isn't supposed to be inherently any less important or powerful on account of the day/night cycle not even existing. unless the ship is supposed to just idle somewhere when picard and co are not on duty like i alluded to. but if the ship continues on it with her regular duties the "night shift crew" should theoretically just as important and powerful as the regular senior staff.

I was giving a shitpost answer, but for truth what you will have is Officers working in shifts and typically first and second officer, and even third will not really work same time as the Captain.
There's a few times when they remember this and you will find that Worf or Data will be in command when Riker or Picard are off Duty. I'd recommend watching Data's Day actually as it covers the night shift. Voyager funny enough establishes that there are working shifts onboard where Captain isn't awake 24/7.

Keep in mind that while the shifts for junior and support staff are likely to be split into discreet crews that work defined shifts, senior staff will work longer shifts that overlap with a varied, unpredictable schedule in practice.
More shifts doesn't imply more people to fill them, so if your job is mostly just showing up and manning a post, you couldn't be happier because it means less boredom and more down time to fuck around on the holodeck. However, number of shifts means fuck all to senior staff. They probably do 12 hr shifts regardless so if there are 4 shifts, now they have fewer people available to do the actual work at any given time so they have to actually jump in and get their hands dirty to get the job done, at least until everyone adjusts.

I know Data, as the 2nd officer(dont know if his android attributes like lack of sleep contribute) leads the Night watch shift. Though he is shown to be relieved by Riker for the early watch, he is show relieving Worf to begin night watch because Picard went off duty to perfom Obriens wedding to Keiko- s04e11 - Data's Day

I would enjoy an incarnation of Star Trek in which the ship has 3 crews that we follow. Each shift would have a different approach to problems and a different mix of personalities…even if you hated one shift you could still have 8 episodes of only the shift you do like each season. Also officers can't leave the bridge.

The very idea that there would even BE a "night shift" on a fucking starship is ludicrous. Even if we assume that they have an artificial day and night period, it wouldn't always sync up with whatever part of whatever planet they were arriving at. If you have a diplomatic meeting with some people at 9am local time, but it's 0300 Enterprise time, you're kinda fucked.
