To be fair, the entire griffonstone episode was a shitheap of a rather astonishing level, and is why I no longer watch the car crash that is the show in its current form.

Nothing made sense, and it completely broke from established worldbuilding.

In any case; Most ponies are far more disfunctional than any griffons. Have you seen the nuttery they get themselves in to? Especially if they ever fail even just a little bit. It's like the marks on their asses are more of a warning "if you mess this up you'll go insane".

Plus, there's the issue of the whole confined destiny, and lack of any drive for improvement, rather sticking to the place you're "supposed" to be in some sort of horrible collectivist hellhole of a life. You get the trashcan cutie mark? Enjoy being a garbage boy your entire life. Lucky enough to get a bag of money as your mark? Congratulations, you've won an easy life!

What established world-building had there been about griffons prior? The only griffons that we had seen before were Gilda and Gustav le Grande, and to my recollection no prior mention of their homeland had ever been made.

Griffons by those two had an established character, as it were. They were prideful to a fault, and rather abrasive.

They could've made a damn good episode built around that. But, no, instead of using the established greedy race of Dragons for this stupid "they're obsessed with money but don't understand so much as the bear minimum of economics", they decide to drag a race what's never been once shown to have anything to do with greed.

It's a symptom of a sudden drop in quality of writing. Personally, I suspect it's due to the show no longer needing to bring in more fans, at this point. Just churn out episodes for that toy sales dosh.

No longer do they need to actually worry about putting in effort.

Then again, griffons were treated rather shittily from the start, anyway. So what do I know. Maybe it was a way of getting people who sided with Gilda during her little episode to see that griffons are just an evil race of bad things, or some shit.

Gilda being selfish and greedy makes perfect sense after "Griffon the Brush Off" considering the way that she jealously monopolized Rainbow Dash's attention. Gustav is the real outlier but not because he was particularly not greedy in "MMMMystery on the Friendship Express." Gustav would seem to have a tremendously interesting story behind his character. Like every other griffon that we would be introduced to later, Gustav has a German name that starts with a "G," yet his likely self-effected title of le Grande is French, the existence of a pony version of which has been confirmed on more than a few occasions in canon. The fact that he is a renowned chef in Equestria tells us that he has been away from home for a long time–long enough to acquire the distinct accent of Pony France and long enough to master Equestrian cuisine. If he had been in Equestria long enough to adopt a local accent and establish himself in a competitive industry, it would make sense that he, much like Spike, would also adopt the local culture.

So, really there is no break between "Griffon the Brush Off" and previously existing canon. If anything, it rather fits with what we knew of Gilda. The new focus on money may be a subtle jab at Germany's relationship with the rest of EU, but only the show creators know if that is indeed the case.
