Monster food absorbs instantly because it's made of magic, but that doesn't necessarily mean monsters don't have digestive anatomy. There was one monster in Grillby's that says he is looking forward to trying human food, and a human bathroom. It's possible that he just doesn't understand the concept, but it seems more likely that monsters can poop, they just don't need to when they have a diet of nothing but magic.
