I'm quite fond of Oliverio Girondo's prose and Juan Filloy's novels. You've gotta know Spanish though, the only book I'm sure has an English translation is Filloy's Op Oloop.

From what I find, Spain doesn't have any notable literature until the Renaissance this I say as a English speaker, but I'll check my bookshelf. At that point, Spain's literature is quite religiose.
