Mayonnaise was created in the 19th century.

Prepared mustard was created in the 4th or 5th century.

So, of the three condiments, the Prophet would have only known about mustard.

I don't think there was mustard in the Arabian peninsula though. we know that he was a honey and date guy though.

The Prophet's (saaws) favorite condiment was vinegar. This is known in the books of sahih ahadeeth. Research it for yourselves. We know everything about the Prophet (saaws), large and small, alhamdulillah. And the more we know about him the more we can love him.
