As a christian, I'd have to say mayo.

Not entirely sure why, but he just seems like the kind of guy that would enjoy a nice, even mayo-spread.

Well, Muhammad (pbuh) died in 632 AD.

Ketchup was created in the 17th century.

Mayonnaise was created in the 19th century.

Prepared mustard was created in the 4th or 5th century.

So, of the three condiments, the Prophet would have only known about mustard.

The Prophet's (saaws) favorite condiment was vinegar. This is known in the books of sahih ahadeeth. Research it for yourselves. We know everything about the Prophet (saaws), large and small, alhamdulillah. And the more we know about him the more we can love him.
