Yes. Exactly how far he demonstrates in the video is ideal. This is why many gyms have wooden paddles or rolls of paper towels wrapped in duct tape or whatever for spacers to place on your chest so you can't go too far down on bench if you're smart enough to actually use them.

Nope. Doing it this way will save your shoulders. Bench pressing is what jacked up my rotator cuff. Tri still get a work out doing it this way.
