Listen /ck/, I have been to the mountaintop. Here's how you fry eggs:
-Get the pan really, really, fucking hot. Heat as high as it will go.
-Have your eggs ready. Don't break the yolks. Breaking the yolks makes the eggs taste like failure.
-Have your spices ready. You got your paprika, your salt, your lemon pepper seasoning, your black pepper, your chili powder, maybe cajun or steak seasoning if you've got it.
-Put your eggs in the pan when it's smoking hot and TURN OFF THE HEAT. If you've got a cast iron skillet it should retain enough heat to cook the eggs perfectly. The bottom gets seared and crispy, while the top stays runny.
-Apply aforementioned spices.
While you're doing this, you're lightly toasting some bread. Butter your bread. Put eggs on top. Eat with a fork and knife, or break the yolks and fold it like a taco.
If you're feeling extra fancy and/or you're a spic like me, slice up an avocado and put it on top of your eggs and toast, along with some salsa roja.
