General cooking: Kenji Lopez-Alt worked at Cook's Illustrated and runs the "Food Lab" column at Serious Eats. He's got a book out and tons of videos.

Baking: Trevor J. Wilson has some pretty good videos on shaping and his bread making process. Chad Robertson is the king of the sourdough world right now and has two books out. Ken Forkish has a book that includes yeasted breads and lots of videos detailing every process in his book.

But like >>11994 said, make sure you look up the credentials of any person that you watch a video from or buy a book from.

Video quality is shit and his kitchen is filthy but he explains things quite well and you quickly realize this guy knows what he's doing. He's no TV chef but a chef in Michelin star restaurant. I recommend his broth and stock videos as well as his french onion soup recipe.

American cheese provides an ideal texture for cheeseburgers.

(Goo is desired; stretchy chew is not.)

Parmesan crisps are right out.

Short of making a cheese sauce and then broiling it until it begins to brown, I'm not seeing an improvement over Murrican for cheeseburger purposes.

(Didn't Heston basically make his own American cheese for his ultimate cheeseburger, anyway?)

All have superior flavor, and if sliced thinly will still melt to achieve a similar consistency. I will give you that American "cheese" does have better texture overall, but it doesn't taste nearly as good as any variety of real cheese.
