There are a multitude of reasons that shrimp are served tail on.
Chief among them is laziness but more important speediness of final assembly on a dish, ie if a line cook fucks up one of the shrimp he has to get another one tossing the fucked up one…which delays the dish and means that the food is getting cold.
There is also a food safety component where once food is cooked cooks generally want to touch the food as little as possible…unless you're literally eating on a shrimping boat most shrimp comes in flash frozen and sometimes pre cleaned (shelled and deveined) so it's nearly impossible to cleanly remove the tail portion prior to cooking the shrimp.
Also it's fun to pop the last bit of flesh out of the tail desu~
