Italian nigga here, lemme drop some Italian secrets on you. Eggplant is filled with water, so what you do is drop some salt on it and let it sweat. After 5-10 minutes it will be a lot drier, then you just wipe it off and start cooking.

Ok first off make your marinara its easy as fuck just some onions/garlic/crushed tomatoes and basil fresh is best at end but dried is fine too (crushed tomatoes usually come with basil anyways so dont fucking freak out it will be okay)

ok now fry those little bitches dont salt them dont fucking do anything just do flour with salt/pepper, into egg wash (egg/milk or cream or water fuck whatever) then into bread crumbs (I like panko for dank crunch but any bread will do even take your fucking sliced bread, toast it and process it boom you got em)

ok so take your fried eggplant, ok? now put some mozz cheese on top and put those bitches in the oven until the cheese melts. You can even under fry them a little before so when they are in the oven they are fucking perfect.

now just top with mary when they are melted and you got the crispiest most fucking tasty eggy parms you ever had

SPecial EDucation. aka you're a mouthbreathing retard. i get paid to make food that other people can't, fite me about it. if you really cared about shit you'd know that globe eggplants are way too waterlogged to fry with a breading straight off and have any kind of success; moreover panko should be reserved for things that stay crunchy, not things like parmegeanas that get slathered with cheese and sauce. where's the rest of your herbs and spices? are you afraid to injure people with some chili flake or oregano? why didn't you tell op to smooth out his marinara with copious amounts of olive oil? why didn't you suggest a blend of cheeses like asiago and parmesan reggiano instead of "mozz" which i assume you get shredded in a bag? fuck if you want to get down to the nitty gritty why didn't you suggest he skin and cook down some san marzanos instead of getting a can of crushed tomatoes with basil? think about what you post and who actually posts on this board before you try to impress an internet stranger. some of us bite back.
