I was having a conversation with protestant friend of mine over 1 Corinthians chapter 11 which led back to a discussion of Christ saying "Do this in remembrance of me." Now I was attempting to argue that partaking of the Eucharist was necessary, but he was going the symbolic route. So is partaking the Eucharist necessary?

There are other ways, but partaking and being a part of the body of Christ is the most practical and easily achieved way of drawing closer to God and reaching the Kingdom.

One can achieve eternal union with God without it, so did all the patriarchs who were righteous, virtuous pagans, people who didn't know the Church, etc, but once one comes into knowledge of the Church and can receive it, they need to at least once a year, and it is super effective for all things.

Because transubstantiation (change of substance) occurs during Holy Communion, not transformation (change of form). You might as well be asking why Jesus Christ, Son of God, resembled a mere man and not something more "Godly". Vid related does a decent job of explaining it.

On one hand, protestants/atheists reject the Eucharist as it does not physically appear to be the body, blood, and soul of Christ (they do not know the difference between transubstantiation and transformation), and on the other hand, they call us cannibals.
