I've deduced that adam and eve died only because of sin. and this sin was eventually forgiven by god's son, jesus christ by his act on the cross.

So technically all that believe in jesus, follow him, and accept his gift of eternal life here will have eternal life.

Many christians I talk to say this eternal life does not apply on earth, but if it didn't why did adam and eve live longer than 120 years, and why didn't jesus die and rise again in the first place?

He took away the power of death from the devil.

There will be a new heaven and a new earth, and the afterlife will be bodily but with new, transfigured bodies like body Jesus had after his resurrection. People also sometimes speak as though what we are living now is the beginning of things and the after life is the end, that once we reach the afterlife that will be some sort of magnificent culmination of history and human striving. I don't think that's the case. The garden of Eden was supposed to be the beginning of something great, but Adam and Eve fell away from that. What we're going through now is not even the beginning. Things haven't even started for humanity.

Because the result of Sin is death. You are right that only those with original sin die and those without like our Lord and our Lady were not subject to death but chose to die. However Jesus provided the means to be reconciled with God but did not remove original sin because justice demands we pay the price of the sin, thus we are subject to death until the ressurrection
