I'm a "fan" of both men, and many more beside, but only because I get solid teaching from them I don't get elsewhere. But, I would never use them as references, only their ideas or exposition.

If they're direct quoting and making a big deal about the source of that quote, then it is all about making their "audience" listen or, perhaps, enhancing their own "cred".
"Oooh, look, here's a quote from Piper. You all like Piper, don't you? Well, keep listening because I might drop in one from MacArthur next! Aren't I cool?"
This is both an indictment on the pastors, riding the coattails of others' hard work, and parishioners who (allegedly) find that sort of thing appealing. Or perhaps not just appealing, but easier: "That guy references MacArthur, so we'll assume he has read MacArthur's 9 billion volumes of exposition, so that's the church for us." Referencing (stealing) a man's ideas is fine (after all, from whom did they really come?), but every sermon ought to rely extensively on what God tells us through scripture than on what others have to say about what God says.
Still, some churches operate on the principle of marketing or commending themselves to parishioners by using trendy names because they lack any confidence in God's Spirit, or in themselves, or just have a bad understanding of how the Spirit works. This is partly a direct consequence of the "marketplace" of evangelical protestant church-going -- some might call it "church-shopping" – where your allegiance is to God and to the truth rather than to whatever is the local flavour of your specified denomination. It is certainly easier to say, "Well, this is the local Catholic parish, I attend here, the end" than to take control of your own faith and not rely on the skills and commitment of those around you to help build your faith up. (That said, I know plenty of Cathbros church-shop to find one they like.)
Without sharing OP's experience, it's hard to say what was going on.

It may have ended "hipster church", but the believers there were real, and Calvinism hasn't gone anywhere, it's just more part of the mix now than it was before.
