What's their history? I keep reading that a lot of them are ethnic Jews who's ancestors were converted during the first 3 centuries of Christianity in India. What truth is there to this?

It's pretty accurate.

There were Roman trade outposts in West-India, and wherever trade outposts are in the Classical World there were Jews.

St. Thomas went forth to India where he converted the indigenous population, but probably also some local Jews.
